Mr MICHAEL REGAN (Wakehurst) (16:53): Today I congratulate Ian Fox, owner of the Dublin Butcher in Forestville, on a cracking result at the Australian Meat Industry Council awards. Ian and his crew took out Best Sausage in New South Wales and landed runner up in the Best Butchers Gourmet Burger and Traditional Australian Beef Sausage categories. Forestville now has its very own Sausage King, and it is well earned. Locals know this shop for its range, from classic bangers to inventive flavours like French lamb and Mexican beef. Every sausage is made onsite by Ian and his team, who put quality first and look after their loyal customers. Each November they back the Killarney Heights French markets—it is on this weekend—serving their crowd favourite, lamb sausage, to happy queues. Ian is a skilled butcher who brings Irish craft together with locally sourced produce, supporting Australian farmers and producers. His product range extends to condiments and pantry items, making it a one‑stop shop for entertaining on the beaches. I congratulate Ian and the whole Dublin Butcher team on these well-deserved accolades. They make Forestville proud, and I love their work.
